Sanxia is Taiwan’s only remaining region specializing in pan-fried green tea. Unlike its Chinese counterpart, Taiwanese Biluochun involves a unique process where farmers allow the tea leaves to rest for several hours during production to enhance their flavor. The appearance of Biluochun is fresh and vibrant green, with abundant white tips on the buds. The leaves are tightly curled into a spiral shape, and the dry tea has a delicate and fresh fragrance. When brewed, the tea produces a clear, bright green infusion that is fresh and refreshing on the palate. Proper attention to brewing temperature and time is essential for this tea.
